The Butcher’s Tip: The Perfect 180°C Roast
For a foolproof finish, preheat your oven to 180°C. Roast your sirloin until the internal temperature hits 52°C (for rare) or 57°C (for medium-rare).
The most important step: Once it's out, wrap it loosely in foil and let it rest for at least 15–20 minutes. This allows the juices to redistribute, ensuring every slice is succulent.
