The Butcher’s Tip: The "High & Fast" Char
Lamb Koftas perform best when cooked over high, direct heat to create a smoky, charred exterior while keeping the center succulent. Whether you are using a flat-top grill, a BBQ, or a griddle pan, aim for 3–4 minutes per side. Because they are shaped into cylinders, try to rotate them every couple of minutes to ensure they brown evenly and the internal juices are "sealed" in by the crust.
The most important step: Don't overcook them! Because lamb mince is at its best when just cooked through, aim for a slight hint of pink in the middle. This ensures the natural fats from the lamb provide that signature "melt-in-your-mouth" texture rather than becoming firm and dry.
