The Butcher’s Tip: The Perfect 150°C Braise
For a foolproof finish, preheat your oven to 150°C. Place the ribs in a heavy pot with your favorite aromatics and enough liquid to submerge them halfway. Cover tightly and slow-cook for 3 to 4 hours.
The most important step: Check for "fork-tenderness"—the meat should slide effortlessly away from the bone. Let the ribs sit in their cooking liquid for 10 minutes before serving to keep them moist.
