The Premium Size 16 Free-Range Whole Chicken
The centerpiece of the classic family roast. A "Size 16" chicken weighs approximately 1.6kg, making it the ideal size to feed a family of four (with a little left over for sandwiches). Our chickens are sourced from premium Australian free-range farms, where they are allowed to grow at a natural pace. This results in a bird with superior muscle tone, a clean flavor, and a skin that crisps up beautifully in the oven.
The Butcher’s Tip: The "Room Temp" Roast
The biggest mistake people make is taking a whole chicken straight from the fridge and putting it into a hot oven. The outside will overcook while the center stays cold. For the best results, take your Size 16 bird out of the fridge 30–45 minutes before cooking to take the chill off.
The most important step: To ensure the breast stays juicy while the legs cook through, roast the chicken at 180°C. A Size 16 chicken typically takes about 1 hour and 20 minutes. Use a meat thermometer to check the thickest part of the thigh; it should read 75°C. Always let the bird rest, covered loosely in foil, for 15 minutes before carving—this is the secret to a moist roast.
