Thin vs. Thick: Choosing Your Style

Size The Best Use Case
Thin (Breakfast Style) Designed for speed. These cook in minutes, making them perfect for the classic "Sausage Sizzle" on white bread, kids' dinners, or chopped into a morning big breakfast.
Thick (Dinner Style) The hearty choice. Thick sausages hold more moisture and are ideal for the "Bangors and Mash"experience or being the star of a slow-cooked curried sausage dish.


The Butcher’s Tip: The "Low and Slow" Sizzle

The most common mistake is cooking sausages too fast on a heat that's too high. This causes the casing to burst (losing all the delicious juices) while leaving the center undercooked.

The Technique: Start on a medium-low heat. Don't prick the skins! Pricking lets the flavor escape. Turn them frequently with tongs (not a fork) for about 8–10 minutes for thin and 15–18 minutes for thick. You want a uniform golden-brown color and a gentle sizzle, not a violent pop.
