The "eye fillet" of pork, portioned for perfection. Our Pork Medallions are expertly sliced from the center of the premium pork fillet (tenderloin), the most tender and lean muscle available. Sourced from high-quality Australian pork, these medallions are entirely fat-trimmed and boneless, offering a delicate, fine-grained texture that melts in the mouth. They are the ideal choice for an elegant, quick-cooking meal that feels like a restaurant-quality experience at home.
The Butcher’s Tip: The "Fast & High" Sear
Pork medallions are designed for speed. Because they are lean and relatively small, they are best cooked quickly over high heat to develop a savory crust without drying out the center. Heat a heavy-based skillet with a knob of butter and a splash of oil. Sear the medallions for just 2–3 minutes per side.
The most important step: Once they feel firm but still have a slight "spring" to the touch, remove them immediately. Aim for a medium finish (with just a hint of blush in the center) and let them rest on a warm plate for 3 minutes. This ensures they stay succulent rather than becoming tough.
