The Butcher’s Tip: The "Reverse Sear" Technique

Because pork cutlets are typically cut thick to ensure juiciness, they can be tricky to cook perfectly on a grill alone. Try the "Reverse Sear": Season generously and place the cutlets in a low oven at 120°C until they reach an internal temperature of 55°C. Then, finish them in a smoking-hot pan with a splash of oil for just 1 minute per side. This gives you a perfect, edge-to-edge pink interior with a spectacular, crusty golden exterior.

The most important step: Don't fear a little blush in the center! Modern Australian pork is safe and at its absolute best when served medium (about 63°C after resting). If you cook it until it's "white" all the way through, you risk losing that signature succulence.
