It’s a butcher’s favorite—deeply flavorful and perfect for a "fall-off-the-bone" finish.
The Butcher’s Tip: The 160°C Low & Slow
For a foolproof finish, preheat your oven to 160°C. Dust the meat lightly in seasoned flour and sear in a heavy pot until browned. Add your liquid—white wine, stock, and crushed tomatoes work best—and braise for 2.5 to 3 hours.
The most important step: Don't forget the "Butcher's Butter." The marrow inside the bone is a delicacy. Once the meat is tender, use a small spoon to enjoy the rich marrow, or stir it directly into your sauce for an extra layer of velvety richness.
