Maximum flavor, minimum cooking time. Our Size 16 Butterfly Chickens have had the backbone removed by our butchers so the bird lays completely flat. This "spatchcock" technique is a game-changer: it ensures the chicken cooks in nearly half the time of a traditional roast, while allowing the heat to hit the skin evenly for a perfect, golden finish. Sourced from premium Australian free-range poultry, these birds come pre-marinated in our signature house-made blends.

The Butcher’s Tip: The "Flat-Roast" Method

The beauty of a butterflied chicken is the speed. Because the bird is flat, the heat reaches the center much faster, which prevents the breast meat from drying out while waiting for the legs to cook.

The Technique: Pre-heat your oven to 200°C. Place the chicken skin-side up on a wire rack over a roasting tray (this allows the hot air to circulate underneath). A Size 16 butterfly chicken will usually be perfectly cooked in 40–50 minutes.

The most important step: Because of the sugars in the Honey Soy and Hickory BBQ marinades, they can darken quickly. If the skin is getting too dark before the meat is done, simply tent a piece of foil loosely over the top for the final 15 minutes.
