The Butcher’s Tip: The "Sizzle, Don't Stew" Method
Chicken breast is very lean, meaning it can dry out quickly if overcooked, but it can also become "rubbery" if the pan isn't hot enough.
The Technique: Use a wok or a large, thin-based frying pan on high heat. Add a splash of neutral oil (like vegetable or peanut oil).
The "Small Batch" Rule: If you’re cooking a large family pack, do it in two halves. If you put too much cold meat in at once, the honey in the marinade will turn into a watery syrup instead of a sticky glaze.
The Timing: Stir-fry for 3–5 minutes. As soon as the chicken is opaque all the way through and the sauce has thickened to a glossy coating, remove it from the heat immediately.
