The Butcher’s Tip: The "Sizzle and Turn"
To get that authentic, smoky grill flavor, ensure your BBQ or griddle pan is smoking hot before the kebabs touch the surface. Cook for 8–10 minutes in total, turning every 2 minutes. This frequent turning ensures the lamb cooks evenly from all sides and allows the marinade to caramelize into a sticky, savory crust without burning the wooden skewer.
The most important step: If you are using a BBQ with a lid, keep it open. Kebabs thrive on direct, intense heat. Closing the lid can create steam, which "stews" the lamb rather than searing it—you want that charred, caramelized edge for the best texture.
