The Butcher’s Tip: The "Medium-Rare" Rule

Because we use high-quality beef cuts, these kebabs don't need to be cooked into oblivion. The secret to a great kebab is a hot, fast sear to lock in the juices.

The Technique: Get your BBQ or griddle pan smoking hot. Cook the kebabs for about 2–3 minutes per side (total of 8–10 minutes). Rotating them regularly ensures the marinade caramelizes into a sticky "bark" without burning the sugars.

The most important step: Rest your kebabs! Just like a steak, let them sit on a warm plate for 3–5 minutes after they come off the grill. This allows the juices to pull back into the center of the meat, ensuring every bite is tender rather than chewy.
