To get that "deep-fried" crunch without the mess of a deep fryer, try the high-heat bake. Pre-heat your oven to 210°C. Place the wings on a wire rack set over a baking tray—this allows hot air to circulate under the wings, crisping the bottom. Bake for 25–30 minutes.

The most important step: If using the Honey Soy or Buffalo marinades, these sugars can caramelize quickly. To avoid burning, you can bake them at a slightly lower 190°C for 35 minutes, or keep a close eye on them in the final 10 minutes. The goal is "sticky and charred," not "burnt."
